2.- LIMPIEZA QUÍMICA 1: Con soda caustica o limpiador alcalino al 1 a 2 % (Ejemplo en 20 litros de agua 200 a 400 gramos) a 65-85° C durante 30 minutos de exposición, este es por inundación total , por recirculación , bocha de limpieza CIP, lo importante es que este el contacto permanente durante todo el tiempo.
3.- ENJUAGUE 1 : Enjuagar con agua clorada hasta eliminar los restos de la limpieza química 1.
4.- LIMPIEZA QUÍMICA 2: Con ácido fosfórico o limpiador ácido al 0.5 a 1 % (Ejemplo en 20 litros de agua 100 a 200 gramos) a 20 ° C durante 30 minutos de exposición, este es por inundación total o por recirculación , bocha de limpieza CIP ,lo importante es que este el contacto permanente durante todo el tiempo.
Este paso se recomienda siempre en zonas de agua dura o cuando se observa piedra de la cerveza. Si se quiere mayor garantía aplicarlo siempre o al menos cada 2 o 3 lavados.
5.- ENJUAGUE 2 : Enjuagar con agua clorada hasta eliminar los restos de la limpieza química 2.
6.- DESINFECCIÓN FINAL:
La desinfección final se puede hacer por pulverización ,contacto , bocha de limpieza CIP (Es importante que no quede ningún punto sin desinfectar), con los siguiente productos:
A.- ALCOHOL 70: Es una mezcla de 70% alcohol etílico (De farmacia uso domiciliario) y 30 % de agua destilada.
No requiere enjuagrue final de agua, solo escurrir los restos.
B.- IODOSFORO: Es un desinfectante de uso industrial alimenticio. En general se usa entre:
0.15% (1.5 c.c. por litro) No requiere enjuagrue final de agua, solo escurrir los restos.
Hasta 0.5 % (5 c.c por litro) Requiere enjuagrue final de agua hasta eliminar los restos.
C.- ACIDO PERACETICO: Es un desinfectante de uso industrial alimenticio. En general se usa al
0.15% (1.5 c.c. por litro) No requiere enjuagrue final de agua, solo escurrir los restos. Hasta 0.5 % (5 c.c por litro) Requiere enjuagrue final de agua hasta eliminar los restos.
